A rich and creamy soup filled with tender potatoes, sautéed vegetables, and a delightful blend of Cajun spices.


Ingredients

  • 4 medium potatoes (Yukon Gold or Russet)
  • 1 large onion
  • 2 cloves garlic
  • 1 bell pepper (red or green)
  • 2 stalks celery
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Crumbled bacon (optional)

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion, minced garlic, diced bell pepper, and celery. Sauté for about 5 minutes, stirring occasionally until the veggies soften and become fragrant.
  2. Toss in the diced potatoes and sprinkle the Cajun seasoning and smoked paprika over the mixture. Pour in the chicken (or vegetable) broth. Bring to a rolling boil, then reduce the heat and let it simmer for about 20 minutes or until the potatoes are tender.
  3. Using an immersion blender, blend the soup until smooth and creamy, leaving some chunks for texture.
  4. Stir in the heavy cream and let it heat through for an additional 5 minutes. Taste and adjust seasoning with salt and pepper.
  5. Serve hot, garnished with chopped green onions and crumbled bacon if desired.

Notes

This soup tastes even better the next day! Store leftovers in an airtight container in the fridge for up to three days.
