Ingredients

  • Zucchini: 4 medium-sized, halved lengthwise and scooped out
  • Chicken: 2 cups cooked, shredded (preferably rotisserie)
  • Buffalo Sauce: 1/2 cup (adjust to taste)
  • Cream Cheese: 4 oz, softened
  • Cheddar Cheese: 1 cup shredded, divided
  • Green Onions: 2, chopped (for garnish)
  • Olive Oil: 1 tablespoon (for drizzling)
  • Salt: to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese until well mixed.
  3. Season the mixture with salt to taste.
  4. Place the zucchini halves on a baking sheet and drizzle with olive oil.
