- 4 medium sweet potatoes
- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1/2 cup Greek yogurt
- 1/2 cup shredded cheddar cheese
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
- In a bowl, mix the shredded chicken with buffalo sauce, Greek yogurt, salt, and pepper.
- Once the sweet potatoes are cooked, cut them in half and scoop out a bit of the flesh.
- Mix the scooped sweet potato flesh with the buffalo chicken mixture.
- Stuff the sweet potato halves with the buffalo chicken mixture.
- Top with shredded cheddar cheese and return to the oven for an additional 10 minutes until the cheese is melted.
- Garnish with chopped green onions before serving.
