- 8 oz elbow macaroni
- 2 cups cooked chicken, shredded
- 1 cup buffalo sauce
- 2 cups shredded cheddar cheese
- 1 cup cream cheese
- 1/2 cup milk
- 1/2 cup blue cheese crumbles (optional)
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the elbow macaroni according to package instructions; drain and set aside.
- In a large pot, combine the cream cheese, milk, and buffalo sauce over medium heat until smooth.
- Add the shredded chicken and half of the cheddar cheese to the pot, stirring until well combined.
- Mix in the cooked macaroni and season with salt and pepper.
- Transfer the mixture to a baking dish and top with the remaining cheddar cheese and blue cheese crumbles if using.
- Bake for 20-25 minutes or until the cheese is bubbly and golden.
- Garnish with chopped green onions before serving.
Notes
- For extra heat, add more buffalo sauce to taste.
- This dish can be made ahead of time and stored in the refrigerator before baking.
- Feel free to substitute the chicken with shredded rotisserie chicken for convenience.
