- 1 head of cauliflower, cut into florets
- 1 cup buffalo sauce
- 4 large whole wheat tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded carrots
- 1/4 cup ranch dressing (optional)
Instructions
- Preheat the oven to 450°F (230°C).
- In a large bowl, toss the cauliflower florets with buffalo sauce until well coated.
- Spread the cauliflower on a baking sheet and roast for 20-25 minutes, or until crispy.
- Warm the tortillas in a skillet or microwave.
- Assemble the wraps by placing roasted cauliflower, lettuce, tomatoes, and carrots on each tortilla.
- Drizzle with ranch dressing if desired, then roll up the tortillas to enclose the filling.
- Serve immediately and enjoy!
