  • 12 lasagna noodles
  • 8 large eggs
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup cooked and crumbled breakfast sausage
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a large bowl, whisk together the eggs, ricotta cheese, garlic powder, onion powder, salt, and pepper.
  4. In a greased baking dish, layer 4 lasagna noodles, followed by half of the egg mixture, half of the sausage, half of the bell peppers, and half of the spinach.
  5. Repeat the layers, finishing with the remaining noodles on top.
  6. Sprinkle mozzarella and Parmesan cheese over the top layer.
  7. Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden.
