- 12 lasagna noodles
- 8 large eggs
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup cooked and crumbled breakfast sausage
- 1 cup diced bell peppers
- 1 cup chopped spinach
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a large bowl, whisk together the eggs, ricotta cheese, garlic powder, onion powder, salt, and pepper.
- In a greased baking dish, layer 4 lasagna noodles, followed by half of the egg mixture, half of the sausage, half of the bell peppers, and half of the spinach.
- Repeat the layers, finishing with the remaining noodles on top.
- Sprinkle mozzarella and Parmesan cheese over the top layer.
- Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before slicing and serving.
