Ingredients
- Flatbread – 1 piece
- Goat cheese – 100g
- Eggs – 2
- Spinach – 1 cup
- Cherry tomatoes – 1/2 cup, halved
- Olive oil – 1 tablespoon
- Salt – to taste
- Pepper – to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the flatbread on a baking sheet.
- Spread the goat cheese evenly over the flatbread.
- In a skillet, heat olive oil and sauté the spinach until wilted.
- Spread the sautéed spinach over the goat cheese.
- Crack the eggs on top of the flatbread.
- Scatter the cherry tomatoes around the eggs.
- Season with salt and pepper.
- Bake in the oven for 12-15 minutes, or until the eggs are set.
- Remove from the oven and let cool slightly before slicing.
