  • 1 large onion, diced
  • 1/2 cup brown sugar
  • 1/2 cup bourbon
  • 1/4 cup apple cider vinegar
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and drain on paper towels.
  2. In the same skillet, add the diced onion and cook until caramelized, about 10-15 minutes.
  3. Add the cooked bacon back to the skillet with the onions.
  4. Stir in the brown sugar, bourbon, apple cider vinegar, black pepper, salt, and cayenne pepper.
  5. Simmer the mixture for about 30 minutes, stirring occasionally, until it thickens.
  6. Let it cool slightly, then transfer to a food processor and pulse until desired consistency is reached.
  7. Store in an airtight container in the refrigerator for up to 2 weeks.
