- 1 pound bacon, chopped
- 1 large onion, diced
- 1/2 cup brown sugar
- 1/2 cup bourbon
- 1/4 cup apple cider vinegar
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and drain on paper towels.
- In the same skillet, add the diced onion and cook until caramelized, about 10-15 minutes.
- Add the cooked bacon back to the skillet with the onions.
- Stir in the brown sugar, bourbon, apple cider vinegar, black pepper, salt, and cayenne pepper.
- Simmer the mixture for about 30 minutes, stirring occasionally, until it thickens.
- Let it cool slightly, then transfer to a food processor and pulse until desired consistency is reached.
- Store in an airtight container in the refrigerator for up to 2 weeks.
Notes
- Adjust the sweetness by adding more or less brown sugar.
- For a spicier kick, increase the cayenne pepper.
- This jam pairs well with cheeses, burgers, and sandwiches.
