Ingredients

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 packet active dry yeast (2 1/4 teaspoons)
- 1/2 cup milk, warmed
- 2 large eggs
- 1/4 cup unsalted butter, melted
- Pastry cream, chocolate, or jam (for filling)
- Oil (for frying)
- Sugar (for dusting)
Instructions
- Combine the warm milk and yeast in a bowl. Let it sit for 5 minutes until foamy.
- Whisk together the flour, sugar, and salt in a large mixing bowl.
- Pour in the yeast mixture, followed by the eggs and melted butter. Mix until a soft dough forms.
- Transfer the dough to a floured surface, knead for about 5 minutes until smooth and elastic.
- Place the kneaded dough in a greased bowl, cover it, and let it rise in a warm area until doubled, about 1 to 2 hours.
- Roll out the dough on a floured surface to about 1/2 inch thick and cut into circles.
- Let the circles rise on a floured surface for another 30 minutes.
- Heat oil to 350°F (175°C) in a deep fryer or large pot, then fry the doughnuts until golden brown, about 2-3 minutes per side.
- Remove them from the oil and let drain on paper towels. Roll each doughnut in sugar while still warm.
- Fill each doughnut with your choice of filling using a piping bag or spoon.
