A delicious and nutritious parfait made with layers of blueberry chia pudding, fresh blueberries, and granola.
Ingredients

- 1 cup almond milk
- 1/4 cup chia seeds
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1/2 cup granola
Instructions
- In a bowl, whisk together almond milk, chia seeds, maple syrup, and vanilla extract.
- Let the mixture sit for about 10 minutes, then stir again to prevent clumping.
- Refrigerate for at least 2 hours or overnight until it thickens.
- In a glass, layer the chia pudding, fresh blueberries, and granola.
- Repeat the layers until the glass is full.
- Top with additional blueberries and a drizzle of maple syrup if desired.
Notes
- For a thicker pudding, increase the chia seeds.
- Feel free to substitute almond milk with any other milk of your choice.
- This parfait can be made ahead of time and stored in the refrigerator for up to 3 days.
