Ingredients

  • Tostada Shells (crispy corn tortillas)
  • Sweet Potatoes (peeled and diced)
  • Black Beans (canned or cooked)
  • Olive Oil (extra virgin)
  • Cumin
  • Paprika
  • Salt
  • Pepper
  • Lettuce or Cabbage (optional)
  • Fresh Tomatoes (optional)
  • Avocado (optional)
  • Sour Cream or Yogurt (optional)
  • Lime (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into small cubes. Toss them in a mixing bowl with olive oil, cumin, paprika, salt, and pepper.
  3. Spread the seasoned sweet potatoes on a baking sheet. Roast in the oven for about 25-30 minutes, stirring halfway through.
  4. Rinse and drain the black beans in a colander.
  5. Assemble the tostadas by layering roasted sweet potatoes and black beans over each tostada shell.
  6. Add your choice of toppings: shredded lettuce, diced tomatoes, avocado, and a dollop of sour cream.
  7. Serve with wedges of lime on the side.
