Ingredients
- Tostada Shells (crispy corn tortillas)
- Sweet Potatoes (peeled and diced)
- Black Beans (canned or cooked)
- Olive Oil (extra virgin)
- Cumin
- Paprika
- Salt
- Pepper
- Lettuce or Cabbage (optional)
- Fresh Tomatoes (optional)
- Avocado (optional)
- Sour Cream or Yogurt (optional)
- Lime (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes into small cubes. Toss them in a mixing bowl with olive oil, cumin, paprika, salt, and pepper.
- Spread the seasoned sweet potatoes on a baking sheet. Roast in the oven for about 25-30 minutes, stirring halfway through.
- Rinse and drain the black beans in a colander.
- Assemble the tostadas by layering roasted sweet potatoes and black beans over each tostada shell.
- Add your choice of toppings: shredded lettuce, diced tomatoes, avocado, and a dollop of sour cream.
- Serve with wedges of lime on the side.
