Instructions

  2. Drain excess fat, then stir in chili powder, cumin, salt, and pepper. Cook for an additional 2 minutes.

  4. Lay a tortilla flat and place about 1/4 of the beef mixture in the center. Fold in the sides and roll tightly to enclose the filling.
  5. In a deep skillet, heat vegetable oil to 350°F (175°C).
  6. Carefully place the chimichangas seam-side down in the hot oil and fry for 3-4 minutes on each side until golden brown.
  7. Remove from oil and drain on paper towels before serving.
