- 4 large flour tortillas
- Vegetable oil for frying
Instructions
- In a skillet over medium heat, brown the ground beef with the diced onion and minced garlic until the beef is fully cooked, about 7-10 minutes.
- Drain excess fat, then stir in chili powder, cumin, salt, and pepper. Cook for an additional 2 minutes.
- Remove from heat and mix in the shredded cheddar cheese until melted and well combined.
- Lay a tortilla flat and place about 1/4 of the beef mixture in the center. Fold in the sides and roll tightly to enclose the filling.
- In a deep skillet, heat vegetable oil to 350°F (175°C).
- Carefully place the chimichangas seam-side down in the hot oil and fry for 3-4 minutes on each side until golden brown.
- Remove from oil and drain on paper towels before serving.
