Description

Crispy, flavorful, and easy-to-make salmon bites with a delicious Bang Bang sauce, perfect for any gathering.


Ingredients

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) or your air fryer to 375°F (190°C).
  2. In a mixing bowl, combine the garlic powder, smoked paprika, salt, and black pepper. Toss the salmon pieces in this mixture until evenly coated.
  3. Pour the panko breadcrumbs onto a plate. Drizzle the salmon pieces with olive oil and roll them in the breadcrumbs until fully covered.
  4. For oven cooking, arrange the salmon bites on a lined baking sheet and bake for 12-15 minutes, flipping halfway. For air frying, cook for 8-10 minutes, checking frequently.
  5. In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  6. Serve the salmon bites over jasmine or cauliflower rice, layer on the cabbage, carrot, and avocado, drizzle with sauce, and garnish with green onions, cilantro, and sesame seeds.
