Description

  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg
  • 2 cups plain panko breadcrumbs
  • Canola oil (for frying)
  • Chopped parsley (for garnish)
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha sauce
  • 2 tablespoons honey
  • 1 tablespoon Sriracha sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper (optional)

Instructions

  1. Make the Bang Bang Sauce: Whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey in a mixing bowl. Set aside.
  2. Prepare the Chicken Marinade: Combine buttermilk, Sriracha, garlic powder, salt, black pepper, and cayenne. Marinate chicken for at least 30 minutes.
  3. Coat the Chicken: Set up a breading station with flour, cornstarch, and egg. Dip chicken in flour, then egg, and finally coat with panko breadcrumbs.
  4. Fry the Chicken: Heat canola oil in a deep fryer or skillet to 350°F. Fry chicken until golden brown, about 4-5 minutes per side.
  5. Drain and Toss: Remove chicken, place it on a cooling rack, then toss in the Bang Bang Sauce.
  6. Garnish and Serve: Transfer to a serving platter, sprinkle with chopped parsley, and serve immediately.

Notes

For a lighter version, replace mayonnaise with Greek yogurt. Pair with rice or wrap in lettuce leaves.
