Description

These Banana Pecan Streusel Muffins are a delightful combination of moist, tender banana bread and a crunchy, buttery streusel topping. Each bite offers a perfect balance of sweetness from ripe bananas and the nutty richness of pecans, creating a comforting and satisfying treat.

Ingredients

Scale
  • Muffin Batter:
    • 3 ripe bananas, mashed
    • 1/2 cup granulated sugar
    • 1/4 cup brown sugar
    • 1/3 cup unsalted butter, melted
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 1/2 cups all-purpose flour
  • Streusel Topping:
    • 1/2 cup all-purpose flour
    • 1/3 cup brown sugar
    • 1/4 cup unsalted butter, softened
    • 1/2 cup chopped pecans
    • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the mashed bananas, granulated sugar, brown sugar, melted butter, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the baking soda, salt, and flour. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  4. In another bowl, prepare the streusel by mixing flour, brown sugar, softened butter, chopped pecans, and cinnamon until crumbly.
  5. Divide the muffin batter evenly among the muffin cups, filling each about 2/3 full.
  6. Sprinkle the streusel topping generously over each muffin.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
