Description

Irresistibly soft and pillowy banana nut cinnamon rolls that fill your kitchen with warmth and sweetness.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup milk
  • 1/4 cup unsalted butter
  • 1 egg
  • 2 ripe bananas, mashed
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)

Instructions

  1. Make the Dough: In a large bowl, whisk together the flour, sugar, salt, and yeast. In a small saucepan, gently heat the milk and butter until warm. Add this mixture to the dry ingredients along with the egg and mashed bananas. Stir until a shaggy dough forms.
  2. Knead the Dough: Knead the dough for about 5-7 minutes until it becomes smooth and elastic.
  3. Let It Rise: Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
  4. Preheat the Oven: As the dough rises, preheat your oven to 350°F (175°C).
  5. Prepare the Filling: Roll out your dough into a large rectangle. Spread a mixture of cinnamon, brown sugar, and chopped nuts evenly over the surface.
  6. Roll and Slice: Starting from one edge, roll up the dough into a log. Slice the roll into 1-inch thick pieces and arrange in a greased baking dish.
  7. Second Rise: Cover the rolls and let them rise again for about 30 minutes.
  8. Bake: Place in the oven and bake for about 25-30 minutes until golden brown.
  9. Prepare the Glaze: Whisk together powdered sugar and milk for a smooth glaze. Drizzle over warm rolls.

Notes

For maximum fluffiness, let the dough rise adequately. You can make the dough a day in advance and refrigerate it after the first rise.
