Instructions

  1. Heat olive oil in a large skillet over medium heat. Allow the oil to shimmer before adding the chicken.
  2. Season chicken breasts with salt and pepper. Sear the chicken in the skillet until golden brown on both sides, about 5-6 minutes per side.
  3. Remove chicken from skillet and set aside to let it rest.
  4. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  5. Pour in the balsamic vinegar and add the halved cherry tomatoes. Stir and bring to a simmer for about 2-3 minutes.
  6. Return the chicken to the skillet. Cover and simmer for 10-15 minutes or until the chicken reaches an internal temperature of 165°F.
  7. Stir in the fresh spinach and cook until wilted.
  8. Serve hot, garnished with fresh basil if desired.
