- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Allow the oil to shimmer before adding the chicken.
- Season chicken breasts with salt and pepper. Sear the chicken in the skillet until golden brown on both sides, about 5-6 minutes per side.
- Remove chicken from skillet and set aside to let it rest.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in the balsamic vinegar and add the halved cherry tomatoes. Stir and bring to a simmer for about 2-3 minutes.
- Return the chicken to the skillet. Cover and simmer for 10-15 minutes or until the chicken reaches an internal temperature of 165°F.
- Stir in the fresh spinach and cook until wilted.
- Serve hot, garnished with fresh basil if desired.

Marinate chicken breasts in balsamic vinegar for enhanced flavor. Consider using air fryer or bake in the oven for alternative cooking methods.
