A refreshing and healthy salad featuring grilled balsamic chicken, creamy avocado, and fresh mozzarella, drizzled with a balsamic reduction.

			- 2 boneless, skinless chicken breasts
 - 1/4 cup balsamic vinegar
 - 1 tablespoon olive oil
 - 1 teaspoon garlic powder
 - Salt and pepper to taste
 - 2 ripe avocados, diced
 - 1 cup cherry tomatoes, halved
 - 8 ounces fresh mozzarella, cubed
 - Fresh basil leaves for garnish
 
Instructions
- Marinate the chicken breasts in balsamic vinegar, olive oil, garlic powder, salt, and pepper for at least 30 minutes.
 - Grill the chicken over medium heat for 6-7 minutes on each side or until fully cooked.
 - Let the chicken rest for a few minutes before slicing it.
 - In a large bowl, combine the diced avocados, cherry tomatoes, and mozzarella.
 - Add the sliced chicken on top of the salad mixture.
 - Drizzle with additional balsamic vinegar if desired and garnish with fresh basil leaves.
 - Serve immediately and enjoy!

- For a vegetarian option, substitute chicken with grilled tofu.
