Ingredients

  • 1 lb salmon fillet, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 clove garlic, minced
  • 1 egg
  • Salt and pepper to taste
  • 1 avocado
  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Flake the salmon into small pieces in a large mixing bowl.
  3. Add breadcrumbs, grated Parmesan cheese, fresh parsley, minced garlic, the egg, salt, and pepper into the bowl. Stir until thoroughly combined.
  4. Shape the mixture into meatballs the size of a golf ball.
  5. Place them on a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes or until golden brown and cooked through.
  7. Prepare the avocado sauce by blending avocado, Greek yogurt, lime juice, and a pinch of salt in a blender until smooth.
  8. Serve the meatballs warm with avocado sauce for dipping.
