Ingredients

  • 2 cups milk (or dairy-free alternative)
  • 1 cup mixed fresh berries (blueberries, strawberries, raspberries)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. Combine the rolled oats, baking powder, cinnamon, and salt in a large bowl.
  3. Whisk together the milk, honey (or maple syrup), vanilla extract, and eggs in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until combined; the mixture should be moist but not soupy.
  5. Fold in the fresh berries gently with a spatula.
  6. Divide the mixture evenly among the muffin tin cups, filling each about three-quarters full.
  7. Bake for 20-25 minutes, or until the edges are golden brown and the center feels set.
  8. Allow to cool slightly before removing from the tin.
