Ingredients

  • 1 can chickpeas (15 oz), drained and rinsed
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 1/4 cup flour (or chickpea flour for gluten-free)
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, black pepper, and cayenne pepper. Pulse until a coarse mixture forms.
  3. Add flour and pulse again until combined.
  4. Form the mixture into small balls or patties and place them on a baking sheet lined with parchment paper.
  5. Drizzle olive oil over the falafel.
  6. Bake for 25-30 minutes, flipping halfway through, until golden brown.
  7. While the falafel is baking, prepare the tahini sauce by mixing tahini, lemon juice, garlic, water, and salt in a bowl until smooth.
  8. Serve the baked falafel warm with tahini sauce drizzled on top.

Notes

  • For a spicier kick, add more cayenne pepper.
  • These falafels can be stored in the refrigerator for up to 3 days.
