Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface to about 1/8 inch thick.
- Cut the pastry into 4 equal squares and place them on a baking sheet lined with parchment paper.
- Prick the center of each pastry square with a fork to prevent puffing.
- Bake the pastry squares for 15-20 minutes or until golden brown and puffed up.
- In a mixing bowl, whisk together the eggs, heavy cream, Gruyère cheese, chives, salt, and pepper.
- Once the pastry is baked, remove it from the oven and carefully press down the center of each square to create a well.
- Pour the egg mixture into each well, filling them about 3/4 full.
- Return the baking sheet to the oven and bake for an additional 15-18 minutes, or until the eggs are set and slightly golden on top.
- Remove from the oven, garnish with fresh chives, and serve warm.
Notes
- This dish can be made ahead by preparing the pastry and egg mixture separately. Assemble and bake just before serving.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
