Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to about 1/8 inch thick.
  3. Cut the pastry into 4 equal squares and place them on a baking sheet lined with parchment paper.
  4. Prick the center of each pastry square with a fork to prevent puffing.
  5. Bake the pastry squares for 15-20 minutes or until golden brown and puffed up.
  6. In a mixing bowl, whisk together the eggs, heavy cream, Gruyère cheese, chives, salt, and pepper.
  7. Once the pastry is baked, remove it from the oven and carefully press down the center of each square to create a well.
  8. Pour the egg mixture into each well, filling them about 3/4 full.
  9. Return the baking sheet to the oven and bake for an additional 15-18 minutes, or until the eggs are set and slightly golden on top.
  10. Remove from the oven, garnish with fresh chives, and serve warm.
