Baked Chicken Ricotta Meatballs with Spinach Alfredo Sauce are irresistibly delicious and a perfect combination of flavors and textures.


Ingredients

  • 1 lb ground chicken
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, ricotta cheese, Parmesan cheese, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs for 25-30 minutes or until cooked through.
  5. In a saucepan, heat the heavy cream over medium heat and add the spinach, cooking until wilted.
  6. Stir in the mozzarella cheese until melted and smooth.
  7. Serve the meatballs topped with the spinach Alfredo sauce.
