- 2 cups broccoli florets (finely chopped)
- 1 cup breadcrumbs
- 1 1/2 cups shredded cheddar cheese
- 1/3 cup grated Parmesan cheese
- 2 eggs
- 2 tbsp all-purpose flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- Cooking spray (for greasing)
Instructions
- Preheat your oven to 400°F (200°C).
- Steam the chopped broccoli until tender-crisp, about 3 to 5 minutes.
- Combine the broccoli, breadcrumbs, cheddar, Parmesan, eggs, and flour in a large mixing bowl.
- Sprinkle in garlic powder, onion powder, salt, and pepper, then stir until cohesive.
- Form the mixture into 1-inch balls using your hands.
- Prepare a parchment-lined baking sheet and place the balls evenly apart.
- Bake for 20 to 25 minutes until golden brown, optionally broiling for extra crispiness.
- Cool slightly, then serve with marinara or ranch dressing.
Notes
You can prepare the mixture a day in advance for quick baking. Consider using an air fryer for a healthier option.
