Description

Delicious, golden-brown bites made with fresh broccoli and rich cheeses, perfect as an appetizer or snack.


Ingredients

  • 2 cups broccoli florets (finely chopped)
  • 1 cup breadcrumbs
  • 1 1/2 cups shredded cheddar cheese
  • 1/3 cup grated Parmesan cheese
  • 2 eggs
  • 2 tbsp all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • Cooking spray (for greasing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Steam the chopped broccoli until tender-crisp, about 3 to 5 minutes.
  3. Combine the broccoli, breadcrumbs, cheddar, Parmesan, eggs, and flour in a large mixing bowl.
  4. Sprinkle in garlic powder, onion powder, salt, and pepper, then stir until cohesive.
  5. Form the mixture into 1-inch balls using your hands.
  6. Prepare a parchment-lined baking sheet and place the balls evenly apart.
  7. Bake for 20 to 25 minutes until golden brown, optionally broiling for extra crispiness.
  8. Cool slightly, then serve with marinara or ranch dressing.

Notes

You can prepare the mixture a day in advance for quick baking. Consider using an air fryer for a healthier option.
