- 2 cups cooked chicken breast, diced or shredded
- 1 large ripe avocado, diced
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 3 tablespoons Greek yogurt or mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 8 large butter lettuce leaves or romaine hearts
- Cherry tomatoes, halved (optional garnish)
Instructions
- Combine the Base Ingredients: In a large mixing bowl, combine the cooked chicken, diced avocado, finely chopped celery, red onion, parsley, and dill. Gently fold the ingredients together.
- Prepare the Dressing: In a small bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and black pepper until smooth.
- Dress the Salad: Pour the dressing over the chicken mixture and gently toss to coat evenly. Taste and adjust seasoning if needed.
- Assemble the Lettuce Cups: Spoon the chicken salad into the lettuce leaves.
- Garnish and Serve: Optionally garnish with halved cherry tomatoes and serve immediately.
Notes
Chill chicken and avocado before mixing for the best flavor. Add avocado just before serving to prevent browning.
