    • 1 cup cherry tomatoes, halved
    • 1 cucumber, diced
    • 1 bell pepper, diced
  • Pita Chips:
    • 2 large pita breads, cut into triangles
    • 2 tablespoons olive oil
    • Salt, to taste
  • Dressing:
    • 1/4 cup olive oil
    • 3 tablespoons fresh lemon juice
    • 1 tablespoon sumac
    • 1 clove garlic, minced
    • Salt and pepper, to taste

Instructions

  2. In a bowl, toss the pita triangles with olive oil and salt, then spread them on a baking sheet.
  3. Bake the pita for 10-12 minutes or until golden and crispy, turning halfway through.
  4. In a large salad bowl, combine the chopped romaine, parsley, mint, cherry tomatoes, cucumber, and bell pepper.
  5. In a separate bowl, whisk together the olive oil, lemon juice, sumac, minced garlic, salt, and pepper to create the dressing.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Add the crispy pita chips just before serving to maintain their crunch.
  8. Serve immediately and enjoy the fresh flavors!
