Ingredients
- Sweet Potatoes: 4 medium-sized, scrubbed and pierced with a fork
- Apples: 2 medium, peeled, cored, and diced
- Brown Sugar: 1/4 cup
- Cinnamon: 1 teaspoon
- Nutmeg: 1/2 teaspoon
- Butter: 2 tablespoons, melted
- Maple Syrup: 2 tablespoons
- Salt: 1/2 teaspoon
- Pecans: 1/2 cup, chopped (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Place the sweet potatoes on a baking sheet and bake for 45-50 minutes, or until tender when pierced with a fork.
- While the sweet potatoes are baking, heat a skillet over medium heat and add the diced apples, brown sugar, cinnamon, nutmeg, and salt. Cook for 5-7 minutes until the apples are soft.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
- Cut the sweet potatoes in half lengthwise and scoop out some of the flesh, leaving a small border.

- Stuff the sweet potato halves with the apple mixture and sprinkle with chopped pecans if desired.
- Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes until heated through.
