Ingredients

  • Sweet Potatoes: 4 medium-sized, scrubbed and pierced with a fork
  • Apples: 2 medium, peeled, cored, and diced
  • Brown Sugar: 1/4 cup
  • Cinnamon: 1 teaspoon
  • Nutmeg: 1/2 teaspoon
  • Butter: 2 tablespoons, melted
  • Maple Syrup: 2 tablespoons
  • Salt: 1/2 teaspoon
  • Pecans: 1/2 cup, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the sweet potatoes on a baking sheet and bake for 45-50 minutes, or until tender when pierced with a fork.
  3. While the sweet potatoes are baking, heat a skillet over medium heat and add the diced apples, brown sugar, cinnamon, nutmeg, and salt. Cook for 5-7 minutes until the apples are soft.
  4. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  5. Cut the sweet potatoes in half lengthwise and scoop out some of the flesh, leaving a small border.
  6. In a bowl, mix the scooped sweet potato flesh with the apple mixture, melted butter, and maple syrup until well combined.
  7. Stuff the sweet potato halves with the apple mixture and sprinkle with chopped pecans if desired.
  8. Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes until heated through.
