- 2 apples, cored and quartered
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 tablespoons fresh sage, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup chicken broth
Instructions
- Preheat the oven to 375°F (190°C).
- In a large roasting pan, place the quartered apples and onion.
- In a small bowl, mix the minced garlic, chopped sage, olive oil, salt, and pepper.
- Rub the mixture all over the chicken, including under the skin.
- Place the chicken on top of the apples and onion in the roasting pan.
- Pour the chicken broth into the pan.
- Roast in the preheated oven for about 1.5 hours, or until the chicken is cooked through and the juices run clear.
- Let the chicken rest for 10 minutes before carving and serving.
