Instructions
- In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the buttermilk, egg, and melted butter.
- Combine the wet and dry ingredients until just mixed.
- Fold in the diced apples, cinnamon, and nutmeg.
- Heat a skillet over medium heat and grease lightly.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- For the syrup, combine maple syrup and vanilla extract in a small saucepan and heat gently.
- Serve pancakes warm with vanilla maple syrup drizzled on top.
Notes
- For a healthier option, use whole wheat flour.
- Feel free to add nuts or raisins for extra texture.
- Store leftover pancakes in the refrigerator for up to 3 days.
