Description
This Apple Cider Pork dish features tender, juicy pork that is infused with the sweet and tangy notes of apple cider, creating a delightful contrast of flavors. The creamy mashed sweet potatoes provide a velvety texture that complements the savory pork, making each bite a comforting experience.
Ingredients
- Pork: 2 lbs pork loin, trimmed
- Marinade: 1 cup apple cider, 1/4 cup soy sauce, 2 tbsp Dijon mustard, 2 cloves garlic (minced), 1 tsp fresh thyme
- Mashed Sweet Potatoes: 2 lbs sweet potatoes, peeled and cubed, 1/2 cup milk, 4 tbsp butter, salt and pepper to taste
Instructions
- In a bowl, combine apple cider, soy sauce, Dijon mustard, minced garlic, and thyme to create the marinade.
- Place the pork loin in a resealable bag and pour the marinade over it. Seal and refrigerate for at least 2 hours, preferably overnight.
- Preheat the oven to 375°F (190°C).
- Remove the pork from the marinade and place it in a roasting pan. Reserve the marinade.
- Roast the pork for 25-30 minutes, basting with the reserved marinade halfway through, until the internal temperature reaches 145°F (63°C).
- While the pork is roasting, boil the sweet potatoes in salted water for 15-20 minutes until tender.
- Drain the sweet potatoes and return them to the pot. Add milk, butter, salt, and pepper, then mash until smooth.
- Let the pork rest for 5 minutes before slicing. Serve with mashed sweet potatoes.
Notes
- This dish can be made ahead by marinating the pork the night before and storing the mashed sweet potatoes in the refrigerator for up to 2 days.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- For a dairy-free option, substitute almond milk and coconut oil in the mashed sweet potatoes.
