  • 1 teaspoon baking soda

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a saucepan, bring the apple cider to a boil and reduce it to about 1/2 cup. Let it cool.
  3. In a large bowl, whisk together the flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, mix the melted butter, eggs, vanilla extract, and reduced apple cider.
  5. Combine the wet ingredients with the dry ingredients until just mixed.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the muffins cool slightly before removing them from the tin.
