- 1 cup apple cider
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a saucepan, bring the apple cider to a boil and reduce it to about 1/2 cup. Let it cool.
- In a large bowl, whisk together the flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix the melted butter, eggs, vanilla extract, and reduced apple cider.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool slightly before removing them from the tin.
Notes
- For extra flavor, you can add chopped apples to the batter.
- These muffins are best enjoyed fresh but can be stored in an airtight container for a few days.
- Dust with cinnamon sugar for an extra sweet touch.
