Ingredients

  • 4 lbs beef short ribs
  • 2 cups apple cider
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the short ribs with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat and brown the short ribs on all sides.
  4. Remove the ribs and set aside. In the same pot, add onion, garlic, carrots, and celery, sautéing until softened.
  5. Add the apple cider, thyme, and bay leaf, scraping up any browned bits from the bottom of the pot.
  6. Return the short ribs to the pot, cover, and transfer to the oven.
  7. Braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
  8. Remove from the oven and let rest for a few minutes before serving.

Notes

  • For a richer flavor, you can add a splash of balsamic vinegar.
  • Serve with mashed potatoes or crusty bread to soak up the sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days.
