			- 1 cup quinoa
 - 1/2 cup farro
 - 1/2 cup barley
 - 1 cup cherry tomatoes, halved
 - 1 cup spinach, chopped
 - 1/2 cup cucumber, diced
 - 1/4 cup red onion, finely chopped
 - 1/4 cup feta cheese, crumbled (optional)
 - 2 tablespoons olive oil
 - 1 tablespoon lemon juice
 - Salt and pepper to taste
 
Instructions
- Rinse the quinoa, farro, and barley under cold water.
 - In a large pot, combine the grains with 4 cups of water and bring to a boil.
 - Reduce heat and simmer for about 20-25 minutes, or until grains are tender.
 - Drain any excess water and let the grains cool.
 - In a large bowl, combine the cooked grains, cherry tomatoes, spinach, cucumber, red onion, and feta cheese.
 - In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
 - Pour the dressing over the grain mixture and toss to combine.
 - Serve immediately or refrigerate for later use.

- Feel free to add your favorite vegetables or proteins.
 - This bowl can be made ahead of time and stored in the refrigerator for up to 3 days.
 - For a vegan option, omit the feta cheese.
